This is my entry for the 20-Something Bloggers Cooking Contest. It's a little late because I made the mistake of suggesting J buy some pants and shoes when we went out today.. the guy is a real diva when it comes to his slim fit Levi's!
The contest was my idea a few weeks ago; I've been meaning to post more of my cooking on here to switch it from a college-party blog to more of a matoooore lifestyle-type thing and thought it would be fun to get more people involved.

This week's theme was creating a pasta dish with only 5 ingredients...Harder than I thought it would be!! I always use a ton of herbs and spices when I cook, particularly now that I need to limit my salt intake. Garlic has always been my best frenemy (love the taste, hate smelling on my hands for days after. Got this as a Christmas present this year, and it really works), and I'll eat practically anything with lemon, so I was excited to work with this recipe:
2- Heat about 1/4 cup olive oil in a smallish skillet. I used my 8-incher.
3- Once oil is shimmering, add minced garlic (2-3 cloves, it turns out pretty mild so you one more than you think you'll need) and cook, stirring, until fragrant and golden. Add pine nuts and continue stirring until lightly browned. This whole process should take about as long as it does to boil water and cook the pasta.
4- Add the zest and juice from the lemon to the pan, heat until simmering. It should smell pretty good right about now.
5- Drain pasta, then toss in pan with sauce for a few minutes to allow the pasta to absorb some good flavors. In retrospect, I could have used about half as much pasta, but everyone needs a nice carb-y day every once in a while.6- Serve steamin' hot. This was a pretty giant lunch portion for me. (Hopefully the judge will forgive my lil parsley garnish.) Yum yum! The garlic gently infuses the oil and the lemon gives up a slight edge. The pine nuts add a really appealing crunch. I'd definitely make it again as a side dish for dinner

I think the pine nuts would make for an interesting texture with the pasta. Can't say I've had them with pasta before, though.
That looks good. Hows the texture of the pine nuts when all is said and done? Do they come out crunchy?
Tim: I had them on hand because I made pesto a while ago, but before this I had never tried them whole with pasta!
Hex: I think if you fried them a little longer they'd get crispy, but I was on the verge of seriously burning my garlic..they came out kind of creamy, which was unexpected but I liked it!
Pine nuts? How cool! I saw this challenge on 20SB but I'm soo not a cook lol, this looks good though!

Looks killer! I rolled my ankle playing basketball the other day and just stopped working out and a ate a row of Girl Scout cookies tonight.
Miche: hope you try a challenge anyway! we all gotta eat, may as well do something fun while you're at it :)
Ken: nothing like GS cookies to sooth the pain.. I'm more than a little irritated that I was in the hospital for Girl Scout cookie season :( didn't get any this year!!
